I went out to eat this weekend at the Water City Grill in Oshkosh, WI and had one of the best meals out that I've had in about 6 months. I could hardly stop eating, and as everyone at my table was reaching in taking bites off of my plate, all I wanted to do was stab them with my fork for taking my truly delectable meal.
What did I have? Meatloaf. Portabella mushroom and Swiss cheese stuffed meatloaf served alongside roasted garlic mashed potatoes and maple glazed carrots. I wish I had a picture because it had a beautiful presentation as well as being a firework display on my taste buds.
I used to hate meatloaf as a kid and refused to eat it until a couple of years ago when my DH suggested it for dinner. His grandmother's recipe was pretty good and so I opened up to it and we've made it a couple of times since. Recently though, I've been seeing on the food network and read about meatloaf making a comeback onto nice restaurant menus, and I can definitely see why.
I am now on the meatloaf hunt — to find a great gourmet meatloaf recipe for my growing recipe collection. When I find one that's worthy, I'll post it, so stay tuned.
